Hi, hello, it’s been a little while. Really, Instagram just doesn’t excite me anymore and it’s just not as fun as it used to be. But I do enjoy posting some fun food occasionally. So here we are.
A few months ago I came up with this tasty concoction - pesto, pumpkin and tomato toast sandwich 🍅🥪

This weekend I made something I’ve never made before - Spinach and Tofu Rolls 🍃 and they turned out pretty decent!
I’ll share the very rough recipe with you down below incase you’d like to give it a go (please tag me in a picture of you do).
The tofu in this recipe was surprisingly tasty, I think the addition of lemon juice gives it a ricotta-like flavour. I would happily make this again! ☺️
Crumble 1 250g block of tofu, and combine with 2 handfuls frozen spinach/8 portions that have been defrosted, 3T nooch, ~3T lemon juice, ¼ cup cream cheese (I had some left over so I used it up, should be fine to omit), sprinkle of garlic powder, 1 T tahini, season with salt and pepper.
Cut two square sheets of vegan puff pastry in half and evenly tofu divide mixture, spreading it lengthwise along the puff pastry, sealing the edge with water and folding the pastry into a roll.
Cut rolls in half and place on a tray lined with baking paper.
Brush with vegan milk and sprinkle with sesame seeds if desired.
Cook at 200C for 20-30 mins or until the pastry is golden and crispy.

A creation from last weekend - Creamy Lime Pie 🥧
The lime trees on the island I am living on have been fruiting so I decided to utilise the lime juice and zest in this dessert 🍨
I got the recipe from @lovingitvegan. It uses few ingredients and is relatively easy to make ☀️

Made with a plain ole pizza base topped with pizza sauce, vegan mozzarella, bbq jackfruit, capsicum, sliced tomato then drizzled with more bbq sauce, sriracha and vegan mayo when cooked 👌
